Christmas cookies
Roll out the dough to a 5mm thickness on a floured surface and then cut out the cookies using Christmas shaped cookie cutters.
Finally, place the cookies on a tray lined with parchment paper and then brush with a little egg yolk. Bake for ten minutes and let cool before calling out to your children: they’re ready!
In a large bowl, mix the flour (sifted with the spices) with the sugar and the salt, then add the butter and work with your fingers until the mixture has a sand-like consistency. Incorporate the egg (and your choice of zests) and then give your kids the job of kneading the dough until it’s completely homogenous. Form the dough into a ball and wrap in cling film before leaving in the fridge for about an hour. In the meantime, preheat the oven to 180°.
To create (as a family) about fifty delicious little cookies you’ll need:
1 egg
250g flour
125g butter cut into little cubes
125g caster sugar
The zest of an organic lemon or an orange (or gingerbread mixture, finely mixed Christmas tea…)
A pinch of salt
